Scheduled Four Day Courses

The emphasis at Dudwell is on having fun, while also learning an essential life skill.  Dudwell School’s main offering is a four day practical cookery course, which is designed both for guests with little cookery experience, as well as for those who want to refresh and develop their cooking skills - whatever your level, you will find new confidence and pleasure in cooking.

 

The course is based on the foundation of fundamental cookery techniques, which are taught through practical recipes.  These recipes, some of which are shown below, are themselves are likely to be based on the Leith’s Cookery Bible, which Caroline co-wrote with Prue Leith.  This will enable you to acquire core kitchen skills, while cooking delicious and interesting food made with top quality ingredients.  A Dudwell Recipe Book, aprons and all equipment are also provided.

 

As an example, you may learn how to make the following in your time with us:

  • Shortcrust or choux pastry
  • Foccacia or spelt bread
  • Hollandaise sauce
  • Macaroons
  • Fresh pasta

Class Format

 

Typically, you will cook in the morning, eat the lunch that you have prepared together in the summer house.  You will then enjoy the afternoon relaxing, or making use of the many leisure activities at your disposal at Dudwell, including a heated pool, croquet lawn, tennis court, cinema and TV rooms or snooker table.  

 

We reconvene in the kitchen to cook supper from around 4.30pm - all of your food for the duration of the course is included in our fee, as well as wine in the evening if desired (if you have a special bottle of wine you'd like to bring, you are more than welcome to do so).

 

We can also arrange additional activities in the afternoon, where you can swim in our outdoor heated pool, learn to play bridge, tennis, paint, play snooker or even participate in a creative writing course, at a small extra cost.
